Veggie Challenge….

Our kids have been tasked with a fun experiment through their swimming program where they will document their veggie intake for a week, aiming to eat five servings a day and trying two brand new veggies they’ve never had before at some point during the week.

The five servings isn’t a big deal though of the five I put in Hanna’s lunch bag in the morning, I suspect four landed in the garbage and ½ of one was eaten. The other half is traded for secrets or gummies to an unsuspecting carrot/gossip-loving friend.

The challenge for me is trying to find a fruit or vegetable they’ve never tried. Aside from the potentially poisonous berries growing in the backyard, I think we’ve covered most from the regular line-up.

I decided on bok-choy because I think I like it but have never cooked it. That’s not to say I haven’t bought it. I bought it a couple of weeks ago and had no idea what I was going to do with it so I researched countless recipes and then let it sit forgotten in a crisper drawer until it scared me and I threw it away.

I also picked up a dragon fruit because as long as we’re being adventurous, who wouldn’t want to eat a DRAGON?!

As it turns out, none of us wanted it. It was a fruit that simply couldn’t measure up to its name.

I googled things like, “How to peel a dragon fruit” and “how to eat a dragon fruit?”

Things I found from my research; any food you google, you will be told it is the best food you can ever eat.

Dragon fruit appears to have magical healing powers and has been proven to be the only thing (food or weapon) able to defeat Gargamel from the Smurfs.

If you eat steamed bok-choy, not only will you never develop cancer, anyone you high-five in your lifetime will also avoid a diagnosis.

And this is only Day 1.
